- 4 medium bell peppers (any color)
Filling:
- 1 lb ground beef
- 3/4 c chopped onion
- 1/4 c uncooked rice
- 3 Tb ketchup
- 1/2 tsp dried oregano
Sauce:
- 1 (14.5 oz) can stewed tomatoes, undrained (I actually used a can of diced tomatoes, since that's what I had)
- 1 Tb ketchup
- 1/2 tsp dried oregano
Heat over to 350. Cut tops off bell peppers, remove seeds. In a large bowl, combine filling ingredients, salt and pepper. Mix thoroughly. Spoon equal amounts of filling into each pepper. Place peppers in a baking dish. Combine sauce ingredients, pour over peppers. Cover dish tightly with foil. Bake 1-1/2 hours.
FYI--I got this recipe from a stand at the grocery store. You can get some pretty good stuff that way. And it was dang tasty, too!
