Coconut Jasmine Rice

  • 1 cup rice
  • 2 tsp vegetable oil
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 tsp ginger root, minced
  • 3/4 c coconut milk
  • 1/2 tsp salt
(Don't have coconut milk? Make it--so easy! Put 1 c shredded coconut into 1 c hot water. Let sit for a few minutes then put in a blender and puree. Strain with a cheesecloth. Pick up the coconut and wring out the liquid. Toast the coconut for future use. Use the coconut "milk" in your recipe. Told you it was easy!)

1. Rinse rice with cold water.
2. Heat oil over medium heat. Cook garlic, onion, and ginger for 5 minutes, or until softened. Stir in coconut milk and 1-1/4 c water. Bring to a boil.
3. Stir in rice. Reduce heat to low and simmer for 20 minutes. Let stand covered for 5 minutes. Fluff with a fork before serving.
