Chewy Chocolate Chip Cookies

  • 2 c + 1 Tb flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1-1/2 sticks butter, melted and cooled slightly
  • 1 c brown sugar
  • 1/2 c granulated sugar
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 1-1/2 c chocolate chips (we've been using milk chocolate AND peanut butter--what a fabulous combination that is!)
1. Preheat the oven to 325.
2. Mix flour, salt, and baking soda in a small bowl. Set aside.
3. Mix butter and sugars until thoroughly blended. Mix in egg, yolk, and vanilla.
4. Add dry ingredients and mix until just combined. Stir in chips.
5. Place on a greased cookie sheet. Bake 10-13 minutes. You want them to be golden brown and for the edges to start to harden slightly. Cool on cookie sheets before removing to wire racks.

These are our new favorite cookies. Seriously--is there anything better than a soft cookie?! Not many things, my friends. Not many things. :)
