- 1 Tb oil
- 2 chicken boobs
- 3 medium potatoes, peeled and chopped
- 1 medium onion, sliced
- 14 oz can coconut milk
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 t curry powder (to taste)
- 1 tsp hot sauce (optional, to taste)
- 1 c chicken broth
- 10 oz frozen peas
Heat oil in a frying pan. Add chicken. Brown on both sides. Place potatoes and onion in crock pot. Add chicken. Combine coconut milk, salt, pepper, curry powder, hot sauce, and chicken broth in a bowl; stir. Pour over chicken. Cover and cook on love for 6-8 hours. Add peas 1/2 hour before serving. Serve with rice or Asian noodles.
Note: This was really my first experience making curry at home. It went fairly well. A couple things about this recipe--(1) I think it way underestimates the amount of curry, hot sauce, and salt you actually need, (2) we were expecting the sauce to taste more curry-ee, and were disappointed at first. However, when we started eating the chicken we noticed that that is where all the flavor was, and it was delicious. (3) this recipe is a work in progress and I will update with more suggestions next time we have it.
