- 3-4 chicken boobs, cut in half length-wise
- 1/4 c butter, melted
- 2 Tb Dijon mustard
- 3/4 c Italian bread crumbs (I didn't have these so instead I ground up a package of stuffing mix and it was heavenly!)
- 1/4 c Parmesan cheese
Combine butter and mustard in a small bowl; mix well. On a plate, combine the crumbs and cheese. Mix well. Dip the chicken into the butter mixture, then coat with bread mixture. Place on an ungreased baking sheet. Bake at 357 degrees for 20-30 minutes. Turn halfway.
