- 1-1/2 lb tomatillos, shucked and rinsed
- 1/2 c chopped onion
- 1/2 c cilantro (I actually use cilantro in some recipes!)
- 1 Tb lime juice
- 1/4 tsp sugar
- 2 jalapeno or serrano peppers, seeded and chopped
- salt to taste
Put tomatillos, onion, cilantro, lime juice, sugar, and peppers in blender or food processor.
Pulse until ingredients are finely chopped and mixed.
Season with salt.
Cool in refrigerator.
Personally, I think it needs a bit more sugar because I find the tomatillos a little bitter. Plus I really love the sweet and spicy combination!
Serve with chips or use in mexican food recipes. I'm planning to use mine to make some taquitos tonight (instead of cafe rio salads, if you're following my menu plan for the week.)
