Black Bean-Corn Tortilla Casserole

  • 1 can of chicken (I use canned in this recipe, but if you have shredded chicken by all means use that, but if you do, you'll need to add a small amount of chicken broth to the sauce)
  • 1 medium onion, chopped
  • 1-2 cloves garlic, chopped
  • 1 can black beans, drained and rinsed
  • 1 can stewed or diced tomatoes
  • chili powder (as much as you want)
  • corn tortillas
  • shredded cheddar cheese

Cook the onions and garlic in a little olive oil over med-high heat. Add chicken (including the broth from the can), tomatoes, and beans. Season with chili powder. Layer tortillas in bottom of pan. Top with half of the chicken mixture, then a layer of cheese. Repeat the layering. Cook at 350-375 until heated through.

Note: you can substitute tortilla chips for the corn tortillas if that's what you have on-hand. It tastes the same either way!
