- 2 1/4 c flour
- 2 Tb baking soda
- 1 Tb baking powder
- 1/2 tsp salt (omit if using salted butter)
- 1- 1/2 c butter, room temperature
- 3/4 c chunky peanut butter
- 1 c brown sugar
- 1 c sugar
- 3 eggs
- 1 tsp vanilla
- 1-1/2 c quick oats (not instant or regular)
- 1- 1/2 c creamy peanut butter
- 1/2 c butter, room temperature
- 1/4 c powdered sugar
In a medium bowl, whisk the flour, baking soda, baking powder, and salt.
In a large bowl, cream butter and peanut butter. Beat in sugars until fluffy. Add eggs, one at a time. Stir in vanilla.
Working at low speed, mix in flour mixture, then oats.
Shape teaspoonfuls of batter into 3/4 inch balls and place on greased sheet. Leave about 2 inches between cookies to allow dough to spread.
Bake for 10 minutes or until light golden brown. Cool on sheet 5 minutes before moving to wire rack to cool completely. Spread filling onto 1/2 of the cookies and make sandwiches using the other 1/2 of the cookies.
Makes about 48 cookies.
